r\u00e9glisse sauvage, bien nettoyer les racines de polypode puis les couper en petits morceaux. Ciseler l&#8217;\u00e9chalote et couper le panais en petite mirepoix. Faire fondre le beurre dans une casserole et y faire revenir \u00e9chalote, panais et les racines. D\u00e9glacer avec le vin blanc puis ajouter le jus de l\u00e9gumes, le lait et la cr\u00e8me. Ajouter les \u00e9pices et assaisonnements, ainsi que jus de citron et Pastis. Laisser mijoter 30 minutes. Mixer la sauce et la passer au tamis fin. \u00c9paissir si besoin est avec un peu de ma\u00efzena puis monter la sauce au beurre. V\u00e9rifier l&#8217;assaisonnement<\/span>.<\/p><p>\u00c9plucher les asperges vertes \u00e0 partir de leur moiti\u00e9 vers le pied (la partie vers la t\u00eate est tendre et reste non \u00e9pluch\u00e9e). Couper les t\u00eates \u00e0 5 cm de longueur puis le reste en morceaux de 5 mm. Ciseler l&#8217;\u00e9chalote finement. Faire fondre 1 c. \u00e0 s. de beurre dans une po\u00eale, y po\u00ealer les pointes d&#8217;asperges et assaisonner de sel et poivre. Les retirer de la po\u00eale. Mettre alors la deuxi\u00e8me cuill\u00e8re de beurre. Faire revenir l&#8217;\u00e9chalote, ajouter les morceaux d&#8217;asperges ainsi que les boutons de plantain. Assaisonner de sel et poivre et finir par ajouter les feuilles de plantain cisel\u00e9es finement.<\/p><p>Assaisonner les poitrines de poularde de sel et poivre puis les saisir c\u00f4t\u00e9 peau \u00e0 l&#8217;huile dans une po\u00eale chaude pour leur donner une belle couleur et un beau croustillant. Les retourner et les mettre sur une plaque. Les finir au four \u00e0 180 \u00b0C pendant environ 10 \u00e0 15 minutes selon leur grosseur et le temps qu&#8217;elles ont pass\u00e9 dans la po\u00eale.
