safran, \u00e9mincer les \u00e9chalotes en lani\u00e8res et les faire revenir dans une casserole avec 1 cuill\u00e8re \u00e0 soupe de beurre. D\u00e9glacer avec le vin blanc et laisser r\u00e9duire de moiti\u00e9. Ajouter le fumet de poisson et laisser r\u00e9duire d&#8217;1\/3. Ajouter la cr\u00e8me et r\u00e9duire \u00e0 nouveau d&#8217;1\/3. Passer la sauce au tamis fin puis la monter au beurre. \u00c9craser les pistils de safran au mortier avec un peu de sel. Ajouter le safran \u00e0 la sauce et assaisonner de sel et de poivre.<\/span><\/p><p>Couper le blanc de poireau en petits d\u00e9s et les pommes de terre en cubes de 5 mm. Faire fondre le beurre dans une casserole et y ajouter l&#8217;\u00e9chalote cisel\u00e9e et le gingembre hach\u00e9. Faire revenir sans coloration 1 minute puis ajouter le poireau et faire encore revenir 1 minute. Ajouter le curcuma, remuer puis d\u00e9glacer avec le vin blanc. Ajouter les pommes de terre, assaisonner de sel et poivre et cuire doucement \u00e0 couvert jusqu&#8217;\u00e0 ce que les pommes de terre soient cuites (ajouter un peu d&#8217;eau si besoin est). V\u00e9rifier l&#8217;assaisonnement.<\/p><p>Pour la cr\u00e8me d&#8217;ortie au gingembre, \u00e9queuter, laver puis blanchir les orties \u00e0 l&#8217;eau bouillante sal\u00e9e. Les rafra\u00eechir puis les \u00e9goutter. Faire fondre le beurre dans une casserole, y ajouter l&#8217;ail et le gingembre et faire revenir sans coloration. Ajouter les orties, cr\u00e8me, miel, sel et poivre et mixer finement pour obtenir une cr\u00e8me verte. V\u00e9rifier l&#8217;assaisonnement.<\/p><p>Parer et portionner les filets de limande. Les assaisonner de sel, poivre et curry et les saisir dans une po\u00eale chaude \u00e0 l&#8217;huile d&#8217;olive. Les retirer sur une plaque et finir \u00e9ventuellement la cuisson au four \u00e0 150 \u00b0C.<\/p><p>Frire les feuilles d&#8217;ortie dans un bain de friture \u00e0 140 \u00b0C pour qu&#8217;elles restent bien vertes et les \u00e9goutter sur du papier absorbant. Assaisonner de sel fin.<\/p><p><span style=\"color: #000000;\">Dresser les diff\u00e9rents ingr\u00e9dients sur des petites assiettes ou des raviers comme vous pouvez le voir sur la photo.
