D\u00e9coquillez-les, r\u00e9servez-les sur une assiette au r\u00e9frig\u00e9rateur et mettez les coquilles creuses de c\u00f4t\u00e9. Filtrez l&#8217;eau des hu\u00eetres. Pelez et hachez finement l&#8217;\u00e9chalote. Faites-la revenir dans un petit faitout avec 20 g de beurre. Ajoutez le serpolet et le poivre mignonnette et faites suer encore 5 mn. D\u00e9glacez avec le cidre, ajoutez 30 fleurs de calament et les feuilles pr\u00e9alablement lav\u00e9es et d\u00e9barrass\u00e9es de leurs tiges. Laissez mijoter doucement \u00e0 couvert pour faire r\u00e9duire jusqu&#8217;\u00e0 un volume de 3 \u00e0 4 c. \u00e0 s. de liquide et passez au chinois. Faites r\u00e9duire l&#8217;eau des hu\u00eetres dans une petite casserole \u00e0 un volume de 3 \u00e0 4 c. \u00e0 s. M\u00e9langez les deux r\u00e9ductions dans la casserole et incorporez 100 g de beurre en pommade par petites parcelles, en mixant r\u00e9guli\u00e8rement. Salez et poivrez (=&gt; Si la sauce n&#8217;est pas assez onctueuse, faites r\u00e9duire davantage, jusqu&#8217;\u00e0 ce qu&#8217;elle prenne la consistance souhait\u00e9e).<\/p><p>Tapissez les assiettes d&#8217;une couche de gros sel et calez-y les coquilles creuses. \u00c9talez les hu\u00eetres sur une plaque \u00e0 r\u00f4tir, nappez-les avec 2 bonnes cuiller\u00e9es \u00e0 soupe de sauce et passez-les 1 mn 30 au four \u00e0 chaleur vive. Sortez la plaque et replacez les hu\u00eetres dans leurs coquilles. R\u00e9cup\u00e9rez la sauce qui reste sur la plaque et r\u00e9int\u00e9grez-la dans le reste de sauce. Mixez-la \u00e0 nouveau. Recouvrez chaque hu\u00eetre dans sa coquille d&#8217;une cuiller\u00e9e \u00e0 caf\u00e9 de sauce.
