grosses c\u00f4tes des feuilles de bourrache. Les laver \u00e0 grande eau. Les essorer soigneusement. Les passer \u00e0 la centrifugeuse et recueillir 5 cl de jus. Verser dans un bocal muni d&#8217;un couvercle \u00e0 vis le jus et l&#8217;huile. Agiter fortement pour homog\u00e9n\u00e9iser l&#8217;ensemble. Ajuster l&#8217;assaisonnement en sel.<br \/>=&gt; si le jus de bourrache vous semble trop puissant, vous pouvez l&#8217;allonger avec de l&#8217;eau. Mais il vous faudra respecter les proportions d&#8217;huile, \u00e0 savoir 20 %.<\/p><p><u>Tiges de bourrache blanche<\/u>\u00a0:<br \/>Sectionner les tiges en morceaux de 5 cm de longueur. Tirer \u00e0 l&#8217;aide d&#8217;un couteau les fibres qui se situent sur la p\u00e9riph\u00e9rie. Tailler dans le sens de la longueur en b\u00e2tonnets de 1 cm de section. Plonger les tiges dans de l&#8217;eau sal\u00e9e en \u00e9bullition et les cuire en les gardant l\u00e9g\u00e8rement croquantes. Egoutter et les plonger dans de l&#8217;eau glac\u00e9e. R\u00e9server sur un linge. Renouveler l&#8217;op\u00e9ration pour les feuilles de bourrache.<\/p><p><u>Pr\u00e9paration finale<\/u>\u00a0:<br \/>Dans une casserole, mettre les tiges et les feuilles avec 10 g d&#8217;eau et 20 g de beurre. Assaisonner. Chauffer doucement afin de pr\u00e9server la forme des l\u00e9gumes et le jus de liaison au beurre.<\/p><p><u>Dressage<\/u>\u00a0:<br \/>Tracer sur l&#8217;assiette un cordon avec le jus de bourrache. Glisser contre ce premier cordon un trait d&#8217;huile d&#8217;olive. Poser sur le cordon les tiges et les feuilles de bourrache. Juter de leur beurre de liaison. Glisser \u00e0 l&#8217;oppos\u00e9 3 queues de langoustines d\u00e9cortiqu\u00e9es, pan\u00e9es de poudre d&#8217;orange et saisies \u00e0 la po\u00eale. Les assaisonner de quelques grains de sel de Gu\u00e9rande.
