Tailler le filet en tranches fines et r\u00e9server au frais. Assaisonner la peau du saumon de sel et poivre et la s\u00e9cher au four \u00e0 120 \u00b0C pendant environ 1 heure.<\/p><p>Pour la cr\u00e8me \u00e0 la sauge des pr\u00e9s, laisser infuser la sauge et la berce dans les jus d&#8217;orange et de citron environ 7 min. Passer au travers d&#8217;une passoire fine, ajouter le sel, le sucre et le vinaigre, puis incorporer la cr\u00e8me fouett\u00e9e. V\u00e9rifier l&#8217;assaisonnement ; le go\u00fbt doit \u00eatre acidul\u00e9-sucr\u00e9. R\u00e9server au frais.<\/p><p>Pour les galettes de pomme de terre, assaisonner les pommes de terre de sel et de muscade et les faire croustiller \u00e0 l&#8217;huile dans des petites po\u00eales.<\/p><p>Badigeonner les tranches de saumon de cr\u00e8me \u00e0 la sauge et en superposer comme cela plusieurs pour former une petite tour, puis les poser sur les 4 galettes de pommes de terre. Entourer les c\u00f4t\u00e9s de chaque &#8220;tour&#8221; avec le saumon fum\u00e9. Ti\u00e9dir au four \u00e0 50 \u00b0C pendant environ 8 min. Pour finir, assaisonner d&#8217;un peu de fleur de sel.<\/p><p>D\u00e9poser la galette de pomme de terre avec le saumon sur des assiettes chaudes et dresser un peu de cr\u00e8me \u00e0 la sauge sur les c\u00f4t\u00e9s.
