les \u00e9plucher. R\u00e9aliser un sirop avec l&#8217;eau, le sucre et le jus de citron et y pocher rapidement les tiges. Les \u00e9goutter et les laisser refroidir. Tailler le reste de la berce en fines rondelles, les pocher de m\u00eame dans le sirop et les \u00e9goutter. Les \u00e9taler sur une plaque recouverte de papier sulfuris\u00e9, saupoudrer de sucre glace et s\u00e9cher au four \u00e0 80 \u00b0C environ 40 min.<\/p><p>Pour les pets de nonne, porter \u00e0 \u00e9bullition l&#8217;eau, le sucre, le beurre et le sel puis retirer du feu. Ajouter la farine tamis\u00e9e et bien l&#8217;incorporer. Remettre la casserole sur le feu et dess\u00e9cher vigoureusement la p\u00e2te environ 4 min. La laisser l\u00e9g\u00e8rement refroidir. M\u00e9langer alors les \u0153ufs un \u00e0 un dans la p\u00e2te ti\u00e8de. Y m\u00e9langer la moiti\u00e9 de la berce s\u00e9ch\u00e9e au four. R\u00e9aliser 12 quenelles avec 2 cuill\u00e8res \u00e0 caf\u00e9. Les frire environ 5 min dans une huile \u00e0 180 \u00b0C pour obtenir une belle coloration blonde. Ils se gonflent alors. Les \u00e9goutter sur du papier absorbant et les saupoudrer de sucre glace.<\/p><p>Pocher les cerises 2 min dans le sirop de berce, puis les \u00e9goutter. R\u00e9duire le sirop de moiti\u00e9 et y remettre les cerises.<\/p><p>Partager les cerises dans des ramequins. D\u00e9poser dessus un pet de nonne et disposer des tiges de berce \u00e0 la verticale contre les beignets et entre les cerises. Enrober le reste de rondelles de berce dans le sucre cristal et les disposer sur les cerises.<br \/><br \/><em>Conseil : Le jus de la berce du Caucase peut, comme le jus d&#8217;autres ombellif\u00e8res, provoquer des l\u00e9sions de la peau sous l&#8217;influence du soleil. Les furo-coumarines sont responsables de cette irritation de la peau et se trouvent dans toutes les parties de la plante. Il est conseill\u00e9 de ramasser la plante t\u00f4t le matin ou le soir, et avec des gants.
