cornouilles, laver les cornouilles et les porter \u00e0 \u00e9bullition dans une casserole avec l&#8217;eau. Laisser mijoter lentement jusqu&#8217;\u00e0 ce que les cornouilles se d\u00e9sagr\u00e8gent. Passer la pulpe au tamis pour retirer les noyaux<\/span>.<\/p><p>Couper les \u00e9chalotes en lani\u00e8res et les faire revenir dans une casserole avec 1 cuill\u00e8re \u00e0 soupe de beurre. D\u00e9glacer avec le vin blanc et laisser r\u00e9duire de moiti\u00e9. Ajouter le fumet de poisson et laisser r\u00e9duire d&#8217;1\/3. Ajouter la cr\u00e8me et r\u00e9duire \u00e0 nouveau d&#8217;1\/3. Mixer la sauce et la passer au travers d&#8217;une passoire fine. Lier \u00e0 la ma\u00efzena, monter au beurre et assaisonner de sel et de poivre. Caram\u00e9liser le sucre dans une casserole, ajouter la sauce poisson, puis ajouter progressivement la pulpe de cornouille. V\u00e9rifier l&#8217;assaisonnement.<\/p><p>Pour la pur\u00e9e de poireau, \u00e9mincer finement l&#8217;\u00e9chalote. Faire chauffer une casserole, faire revenir le cumin \u00e0 sec, ajouter la noix de beurre et l&#8217;\u00e9chalote et faire revenir. Mixer finement le poireau (temp\u00e9r\u00e9 voire ti\u00e8de) avec l&#8217;\u00e9chalote revenue. Ajouter le beurre fondu et assaisonner de sel et poivre.<\/p><p>Pour les spaghettis de courgette, mixer ensemble l\u2019origan hach\u00e9, l\u2019ail, le curry, le sel et l\u2019huile d\u2019olive. Couper la courgette en spaghettis gr\u00e2ce \u00e0 un coupe-l\u00e9gume appropri\u00e9. Faire chauffer une po\u00eale, y verser la marinade et faire cuire rapidement les spaghettis de courgette. Assaisonner de sel et poivre et retirer de la po\u00eale en les gardant encore un peu ferme.<\/p><p>Parer et portionner les filets de cabillaud. Les assaisonner de sel, poivre et garam massala et les saisir dans une po\u00eale chaude \u00e0 l\u2019huile d\u2019olive.
