\u00e9mincer finement l\u2019oignon et hacher les gousses d\u2019ail. Faire revenir dans une casserole \u00e0 l\u2019huile d\u2019olive. Ajouter les tomates fra\u00eeches taill\u00e9es en morceaux ainsi que le bouquet garni. Laisser mijoter 30 min. Retirer le bouquet garni. Mixer la sauce et la passer dans une \u00e9tamine fine. Saler, poivrer et ajouter le thym hach\u00e9.<\/span><\/p><p>Pour la polenta, chemiser une terrine de film plastique. Verser l\u2019eau, le lait, le curcuma et le sel dans une casserole. Donner une \u00e9bullition puis ajouter la polenta. Faire cuire quelques minutes \u00e0 petite \u00e9bullition en m\u00e9langeant au fouet. Ajouter le parmesan, m\u00e9langer et v\u00e9rifier l\u2019assaisonnement. Garnir la terrine \u00e0 moiti\u00e9 et lisser.<\/p><p>Blanchir les feuilles d&#8217;ortie quelques minutes, les rafra\u00eechir, les \u00e9goutter puis les hacher finement. Verser l\u2019eau, le lait et le sel dans une casserole. Donner une \u00e9bullition. Mixer finement les orties avec le liquide bouillant puis remettre dans la casserole. Redonner une \u00e9bullition puis ajouter la polenta. Faire cuire quelques minutes \u00e0 petite \u00e9bullition en m\u00e9langeant au fouet. Ajouter le parmesan, m\u00e9langer et v\u00e9rifier l\u2019assaisonnement. Garnir la terrine et lisser. R\u00e9server 2 h au frais.<\/p><p>D\u00e9mouler la polenta et tailler des tranches de 1 cm. R\u00e9chauffer \u00e0 la vapeur.<\/p><p><span style=\"color: #000000;\">Pour les orties en \u00e9pinards, blanchir les feuilles d&#8217;orties quelques minutes (moins longtemps que pour la polenta), les rafra\u00eechir, les \u00e9goutter puis les hacher grossi\u00e8rement. Ciseler l&#8217;\u00e9chalote, la faire revenir au beurre dans une casserole.
