Les hacher au cutter. Porter le lait \u00e0 \u00e9bullition. Mettre l&#8217;asp\u00e9rule \u00e0 infuser 15 mn hors du feu. Blanchir les jaunes d&#8217;\u0153ufs et le sucre. Ajouter le lait bouillant pass\u00e9 au chinois. Cuire comme une cr\u00e8me anglaise. Ajouter la g\u00e9latine ramollie, puis les amandes hach\u00e9es. Laisser refroidir sans laisser prendre. Fouetter la cr\u00e8me. Incorporer d\u00e9licatement l&#8217;anglaise sur la cr\u00e8me fouett\u00e9e.
