Couper en petits morceaux et s\u00e9cher. Faire torr\u00e9fier les racines s\u00e9ch\u00e9es dans une casserole en remuant constamment, jusqu&#8217;\u00e0 ce qu&#8217;elle soit noire (comme du caf\u00e9). Ajouter le sucre et caram\u00e9liser jusqu&#8217;\u00e0 coloration fonc\u00e9e. D\u00e9glacer avec l&#8217;eau. Laisser infuser 15 minutes. Passer le caf\u00e9 de pissenlit au tamis fin. Ajouter l&#8217;Amaretto.<\/span><\/p><p><span style=\"color: #000000;\">Tremper les biscuits dans le caf\u00e9 et les disposer dans le moule \u00e0 gratin.<\/span><\/p><p><span style=\"color: #000000;\">Pour la cr\u00e8me aux fleurs de pissenlit, battre les jaunes d&#8217;\u0153ufs et la gel\u00e9e de pissenlit dans un bol au bain-marie jusqu&#8217;\u00e0 82 \u00b0C, puis battre au batteur-m\u00e9langeur jusqu&#8217;\u00e0 ce que l&#8217;appareil soit refroidi. Y incorporer la mascarpone.
