Ajoutez le sucre et m\u00e9langez. Portez rapidement \u00e0 \u00e9bullition. Lorsqu&#8217;elle est atteinte, comptez 6 mn. \u00c9cumez soigneusement la mousse noire, puis remuez avec une spatule. Au terme des 6 mn de cuisson, ajoutez le jus du citron, passez la gel\u00e9e au chinois et versez-la aussit\u00f4t dans les petits pots en verre. Laissez reposer 6 h \u00e0 temp\u00e9rature ambiante, sans les bousculer.<\/span><\/p><p><span style=\"color: #000000;\">D\u00e9coupez 7 disques de papier sulfuris\u00e9, passez-les dans de l&#8217;eau-de-vie de chaque c\u00f4t\u00e9 et posez-les \u00e0 la surface de la gel\u00e9e. Fermez chaque pot avec son couvercle. Conservez les pots \u00e0 la cave.
