\/><br \/>Les merises peuvent \u00eatre fra\u00eeches, en bocal ou congel\u00e9es. Dans ce cas, conservez le jus pour arroser le pigeon durant la cuisson.<br \/>Pr\u00e9parez le pigeon, bardez-le et faites-le r\u00f4tir dans une cocotte avec un peu de beurre. D\u00e8s qu&#8217;il est dor\u00e9 de toutes parts et semble cuit, jetez une poign\u00e9e de merises tout autour, laissez cuire \u00e0 couvert 10 min encore. Arrosez-le avec la liqueur de cerises. Faites flamber. Remuez bien et testez la cuisson \u00e0 l&#8217;aide d&#8217;une pointe de couteau. Si la peau vous para\u00eet r\u00e9sistante, laissez-le cuire encore 10 min. Disposez-le dans un plat de service que vous r\u00e9servez au chaud, puis go\u00fbtez le jus de cuisson auquel vous pouvez ajouter un doigt de kirsch. Tout en remuant, d\u00e9glacez les sucs avec un peu de jus de merises. Remettez-y le pigeon d\u00e9coup\u00e9 quelques minutes.
