Faire chauffer de l&#8217;huile et du beurre dans une po\u00eale et y po\u00ealer les poitrines de dinde. Les garder alors \u00e0 couvert \u00e0 temp\u00e9rature moyenne pendant environ 20 min pour qu&#8217;elles restent bien juteuses. Les laisser enfin reposer en dehors du fourneau 10 min.<br \/>Pour la sauce, caram\u00e9liser blond le sucre, d\u00e9glacer avec le vinaigre, la cr\u00e8me et le lait, puis ajouter la moiti\u00e9 des feuilles et fleurs de gesse hach\u00e9es. Porter \u00e0 \u00e9bullition et laisser infuser 30 min \u00e0 couvert. R\u00e9duire alors de moiti\u00e9.
