le sel, le sucre et les fleurs d&#8217;armoise hach\u00e9es, \u00e9taler cet assaisonnement sur les filets et laisser mac\u00e9rer 24 heures.<br \/>Blanchir les feuilles de liseron \u00e0 l&#8217;eau bouillante sal\u00e9e. Les rafra\u00eechir \u00e0 l&#8217;eau froide puis les \u00e9goutter. Assaisonner de sel, sucre, jus de citron et huile d&#8217;olive.<br \/>Tailler les filets de maquereaux en longues tranches fines et les enrouler en roses.<br \/>Pour le th\u00e9 d&#8217;ortie, porter l&#8217;eau \u00e0 \u00e9bullition. Avec un rouleau \u00e0 p\u00e2tisserie, \u00e9craser les feuilles d&#8217;ortie, de fa\u00e7on \u00e0 rendre inoffensifs les poils urticants de la plante, puis tailler les feuilles en julienne et les recouvrir de l&#8217;eau bouillante. Laisser refroidir puis passer le th\u00e9 au travers d&#8217;une passoire.<br \/>Pour le caramel d&#8217;ortie, caram\u00e9liser le sucre d&#8217;une couleur brun-clair, d\u00e9glacer avec le th\u00e9 d&#8217;ortie et le vinaigre, porter \u00e0 \u00e9bullition et r\u00e9duire \u00e0 consistance sirupeuse. Laisser refroidir.<br \/>Pour la tapenade, \u00e9tuver les fleurs d&#8217;acacia et l&#8217;ail hach\u00e9 \u00e0 l&#8217;huile d&#8217;olive. Laisser refroidir. Ajouter les filets d&#8217;anchois, les olives rouges, le thon et le jus de citron et r\u00e9duire tout cela en pur\u00e9e \u00e0 l&#8217;aide d&#8217;un bain-mix. Relever de chili en poudre. Conserver au frais. La tapenade se conserve quelques semaines au r\u00e9frig\u00e9rateur.<br \/>Tirer un trait de caramel d&#8217;ortie sur les assiettes. Partager les olives rouges et la tapenade sur les assiettes, et d\u00e9poser sur chaque 3 roses de filets de maquereaux.
