<strong>Yoann Hue<\/strong>, fran\u00e7ais n\u00e9 le 1er juillet 1976 \u00e0 Flers dans l&#8217;Orne.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Mon enfance<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Ma passion pour la cuisine est n\u00e9e tr\u00e8s jeune. Je n&#8217;ai en souvenir que l&#8217;id\u00e9e de vouloir devenir cuisinier et rien d&#8217;autre. Ma m\u00e8re avait elle-m\u00eame toujours eu l&#8217;envie d&#8217;\u00eatre cuisini\u00e8re. D&#8217;abord refus\u00e9e d&#8217;entrer en \u00e9cole h\u00f4teli\u00e8re car ils ne prenaient pas de femmes \u00e0 l&#8217;\u00e9poque, elle fut d&#8217;abord aide-maternelle, puis elle eut la chance de pouvoir entrer comme cantini\u00e8re et pr\u00e9parait de bons petits plats aux enfants (mon p\u00e8re quant \u00e0 lui \u00e9tait Chef d&#8217;\u00e9quipe dans une fabrique de jouets). Mon amour pour les bons petits plats m&#8217;a donc \u00e9t\u00e9 inculqu\u00e9 par ma maman, mais aussi par mon oncle Jean-Marie Dumaine, Chef de son restaurant &#8220;Vieux Sinzig&#8221; \u00e0 Sinzig en Allemagne, o\u00f9 l&#8217;on allait souvent en vacances d&#8217;\u00e9t\u00e9. J&#8217;avais donc d\u00e9j\u00e0 eu tout petit un pied dans une cuisine de restaurant et des souvenirs de go\u00fbts et d&#8217;odeurs subtils plein la t\u00eate.<\/span><\/p><p><strong><span style=\"color: #000000;\">Ma formation<\/span><\/strong><\/p><p><span style=\"color: #000000;\">Tr\u00e8s bon \u00e9l\u00e8ve en primaire et au coll\u00e8ge, mes professeurs me voyaient plut\u00f4t suivre la fili\u00e8re baccalaur\u00e9at. Seulement ma volont\u00e9 d&#8217;acqu\u00e9rir les meilleures bases de la cuisine fran\u00e7aise m&#8217;a dirig\u00e9 en premier lieu vers un BEP-CAP Cuisine au Lyc\u00e9e H\u00f4telier M. Marland \u00e0 Granville. S&#8217;en est suivi alors un Bac Technologique au Lyc\u00e9e H\u00f4telier F. Rabelais \u00e0 H\u00e9rouville Saint Clair qui m&#8217;a permis d&#8217;approfondir mes connaissances en gestion et \u00e9conomie, mais aussi en service, \u0153nologie et h\u00e9bergement. Chez mon oncle et ma tante Jean-Marie et Colette Dumaine, l&#8217;accent est mis sur la fra\u00eecheur des produits. J&#8217;apprends l\u00e0 entre autres \u00e0 d\u00e9pecer des chevreuils ou des li\u00e8vres, \u00e0 plumer des faisans provenant de chasseurs de la r\u00e9gion. Jean-Marie met \u00e9galement un point d&#8217;honneur \u00e0 limiter le gaspillage, en utilisant par exemple les tiges et feuilles de chou-fleur ou chou-rave pour r\u00e9aliser des flans. La production de produits en bocaux tels que des p\u00e2t\u00e9s, des chutneys ou des confitures pour vendre dans toute l&#8217;Allemagne en \u00e9picerie fine est pour moi aussi un nouveau monde. Mais c&#8217;est surtout l&#8217;apprentissage et la reconnaissance des plantes sauvages et leur utilisation en cuisine qui m&#8217;aura le plus marqu\u00e9. R\u00e9colt\u00e9es, s\u00e9ch\u00e9es et conserv\u00e9es dans mon herbier, j&#8217;apprends petit \u00e0 petit \u00e0 les reconna\u00eetre et \u00e0 d\u00e9couvrir leur int\u00e9r\u00eat gustatif. Jeune cuisinier sans grande exp\u00e9rience &#8220;\u00e9toil\u00e9e&#8221;, me voil\u00e0 arriv\u00e9 dans l&#8217;un des meilleurs restaurants de France (3 \u00e9toiles au Guide Michelin et 19\/20 au Gault-Millau). Qu&#8217;importe le manque d&#8217;exp\u00e9rience, Michel Bras porte plus l&#8217;attention sur l&#8217;Humain et la motivation qu&#8217;il a \u00e0 donner le meilleur de soi-m\u00eame. Deux ann\u00e9es au poste des viandes-poissons-sauces puis trois ann\u00e9es au poste du Garde-manger, les 2 derni\u00e8res ann\u00e9es \u00e9tant promu sous-chef en cuisine, m&#8217;auront permis de d\u00e9couvrir des Hommes, un Univers, un Esprit Bras, impressionnant de justesse, de simplicit\u00e9, de respect (du produit comme de l&#8217;Humain), qui m&#8217;envo\u00fbte encore aujourd&#8217;hui. Les plats sont agr\u00e9ment\u00e9s et embellis de plantes et fleurs sauvages ainsi que du march\u00e9 \u00e0 Rodez (plus tard provenant \u00e9galement du jardin personnel de Michel Bras), ce qui m&#8217;a permis de rester dans mon \u00e9l\u00e9ment et de cr\u00e9er en 2001 mon propre site internet &#8220;La cuisine sauvage&#8221;. Le lundi, jour de cong\u00e9, sont organis\u00e9s des sorties entre employ\u00e9s (sous l&#8217;association &#8220;Les Bras K&#8217;C&#8221;), parmi lesquels se joint volontiers la famille Bras, permettant de lier une certaine amiti\u00e9, une certaine confiance, un certain engouement qui se retrouvent alors dans un meilleur travail d&#8217;\u00e9quipe. Mes cinq ann\u00e9es aux c\u00f4t\u00e9s de Michel et S\u00e9bastien Bras, ainsi que de R\u00e9gis (le Chef de Cuisine), m&#8217;auront permis d&#8217;acqu\u00e9rir une rigueur mieux affirm\u00e9e, une vision diff\u00e9rente dans l&#8217;utilisation des produits, une meilleure compr\u00e9hension dans les cr\u00e9ations de plats et dans les dressages (le &#8220;Style Bras&#8221;), ainsi qu&#8217;une autre vision de l&#8217;esprit d&#8217;\u00e9quipe que l&#8217;on ressent en \u00e9tant un Bras K&#8217;C.<\/span><\/p><p><span style=\"color: #000000;\">Tournant de taille dans ma carri\u00e8re, c&#8217;est en novembre 2003 que Michel Bras me donne toute sa confiance en me confiant la Direction de son second restaurant \u00e0 Toya sur l&#8217;\u00eele d&#8217;Hokkaido au Japon \u00e0 compter du 1 janvier 2005, pour succ\u00e9der \u00e0 Alexandre Bourdas. Le Restaurant Michel Bras-Toya-Japon \u00e9tait situ\u00e9 au 11e \u00e9tage de l&#8217;H\u00f4tel Windsor et sera distingu\u00e9 par 3 Macarons Michelin lors de l&#8217;arriv\u00e9e du guide \u00e0 Hokkaido en 2012. Deux ann\u00e9es intenses \u00e0 reproduire la cuisine et le style Bras-Laguiole gr\u00e2ce aux produits locaux, mais surtout \u00e0 prot\u00e9ger l&#8217;image de la famille Bras face \u00e0 des managers japonais toujours plus tourn\u00e9s vers l&#8217;envie de profit que vers le bien-\u00eatre des Hommes.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-7c66957 elementor-section-full_width elementor-section-height-default elementor-section-height-default\" data-id=\"7c66957\" data-element_type=\"section\" data-e-type=\"section\" data-settings=\"{&quot;background_background&quot;:&quot;gradient&quot;}\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-b1ca656\" data-id=\"b1ca656\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-d36b223 elementor-widget elementor-widget-text-editor\" data-id=\"d36b223\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"color: #000000;\"><strong>Trois saisons d&#8217;hiver dans les Alpes<\/strong><\/span><\/p><p><span style=\"color: #000000;\">Petit retour en arri\u00e8re pour souligner mes 3 saisons d&#8217;hiver \u00e0 l&#8217;H\u00f4tel Calgary aux Saisies dans les Alpes, pass\u00e9es aux c\u00f4t\u00e9s de Didier Vidal, Chef de Cuisine, un Aveyronnais lui aussi. Dans une bonne ambiance, on servait d&#8217;abord les clients de l&#8217;h\u00f4tel, puis on proposait une carte gastronomique pour les plus gourmets.<\/span><\/p><p><strong><span style=\"color: #000000;\">Mon retour au Restaurant Vieux Sinzig<\/span><\/strong><\/p><p><span style=\"color: #000000;\">Revenu du Japon, mon amour pour la cuisine des plantes sauvages me reconduisit chez mon oncle, Jean-Marie Dumaine, pour approfondir mes connaissances dans le domaine. Le restaurant avait pris de l&#8217;ampleur et continua d&#8217;en prendre apr\u00e8s mon arriv\u00e9e : 1 point de plus au Gault-Millau passant \u00e0 16\/20, toujours plus d&#8217;\u00e9v\u00e8nements au restaurant comme \u00e0 l&#8217;ext\u00e9rieur. Les journ\u00e9es \u00e9taient longues et bien remplies, mais la satisfaction et la reconnaissance des clients \u00e9taient r\u00e9confortantes. Durant ces 8 ann\u00e9es, les cartes et menus se laissaient dicter la saisonnalit\u00e9 des plantes sauvages, fleurs et fruits (les pousses d&#8217;\u00e9pic\u00e9a d\u00e9but mai, les fleurs de reine des pr\u00e9s d\u00e9but juillet, les cornouilles d\u00e9but septembre). Ces ann\u00e9es riches de savoir et d&#8217;exp\u00e9rience m&#8217;ont conduit \u00e0 quitter le restaurant familial par envie de vouloir transmettre mes propres cr\u00e9ations culinaires aux clients.<\/span><\/p><p><span style=\"color: #000000;\"><strong>Une escapade dans l&#8217;Eifel<\/strong><\/span><\/p><p><span style=\"color: #000000;\">C&#8217;est \u00e0 Kempenich, au &#8220;Eifel-Gasthof Kleefu\u00df&#8221;, que Stefanie Kleefu\u00df me permit de m&#8217;\u00e9panouir sans \u00eatre l&#8217;ombre d&#8217;un autre chef. L\u00e0 aussi, la carte \u00e9tait rythm\u00e9e par les plantes et fleurs sauvages. On organisait comme \u00e0 Sinzig des randonn\u00e9es botaniques, des cours de cuisine, mais aussi des D\u00eener-enqu\u00eate. La fermeture du restaurant m&#8217;obligea \u00e0 trouver une alternative, que mon ami et ancien coll\u00e8gue \u00e0 Sinzig, Jaspreet Dhaliwal, me fournit.<\/span><\/p><p><strong><span style=\"color: #000000;\">Les herbes et fleurs c\u00f4toient les \u00e9pices indiennes au Restaurant &#8220;Der Vierte K\u00f6nig&#8221; \u00e0 Cologne\u00a0<\/span><\/strong><\/p><p><span style=\"color: #000000;\">Arriv\u00e9 fin 2018 aux c\u00f4t\u00e9s de Preet, on y propose une cuisine fran\u00e7aise agr\u00e9ment\u00e9e, au fil des saisons, de plantes et fleurs sauvages et d\u00e9licatement relev\u00e9e d&#8217;\u00e9pices indiennes. Restaurant au style &#8220;Art nouveau&#8221;, ambiance agr\u00e9able, service sympathique et attentionn\u00e9, tout est r\u00e9uni pour offrir aux clients une agr\u00e9able soir\u00e9e.\u00a0<\/span><\/p><p><strong><span style=\"color: #000000;\">De retour dans la vall\u00e9e de l&#8217;Ahr \u00e0 l&#8217;H\u00f4tel-Restaurant &#8220;Hohenzollern&#8221; \u00e0 Ahrweiler\u00a0<\/span><\/strong><\/p><p><span style=\"color: #000000;\">Aux c\u00f4t\u00e9s de J\u00f6rg Kleber depuis mars 2025, nous proposons une cuisine classique et r\u00e9gionale, pr\u00e9par\u00e9e avec beaucoup de soins.
