Les assaisonner de sel et poivre. Les badigeonner de blanc d\u2019\u0153ufs et y coller les 6 feuilles d&#8217;origan (ou plus si besoin) comme pour repr\u00e9senter les \u00e9cailles du poisson. Les saisir dans une po\u00eale chaude \u00e0 l\u2019huile d\u2019olive. Les retirer sur une plaque et finir \u00e9ventuellement la cuisson au four \u00e0 150 \u00b0C.<\/p><p>Pour les flans de courgette, laver et couper les courgettes en tranches de 0,5 cm. Les faire revenir \u00e0 l&#8217;huile d&#8217;olive dans une po\u00eale chaude. Ajouter \u00e9chalote et ail, assaisonner de sel et poivre et faire revenir encore 2 minutes. Peser alors les courgettes. On ajoutera 1 \u0153uf et 50 g de cr\u00e8me pour 100 g de courgette. Mixer finement les courgettes avec les \u0153ufs puis ajouter la cr\u00e8me liquide pr\u00e9alablement chauff\u00e9e ainsi que le thym hach\u00e9. V\u00e9rifier l&#8217;assaisonnement. Beurrer des petits bocaux ou des moules silicones. Remplir l&#8217;appareil dans les bocaux. Cuire au four vapeur \u00e0 80\u00b0C pendant environ 30 minutes ou au four dans un bain-marie chaud \u00e0 110\u00b0C pendant environ 30 minutes<\/p><p>Pour la sauce \u00e0 l&#8217;orange et \u00e0 la cistre, couper les \u00e9chalotes en lani\u00e8res et les faire revenir dans une casserole avec 1 cuill\u00e8re \u00e0 soupe de beurre. Ajouter le sucre et laisser caram\u00e9liser jusqu\u2019\u00e0 ce qu\u2019il blondisse. D\u00e9glacer avec le jus d&#8217;orange, ajouter le curcuma et laisser r\u00e9duire de moiti\u00e9. Ajouter le fumet de poisson et laisser r\u00e9duire de moiti\u00e9. Ajouter la cr\u00e8me et r\u00e9duire \u00e0 nouveau de moiti\u00e9. Passer la sauce au travers d\u2019une passoire fine. Lier \u00e0 la ma\u00efzena, monter au beurre et assaisonner de sel et de poivre, Ajouter enfin les zestes d&#8217;orange ainsi que la cistre, laisser infuser 10 minutes puis v\u00e9rifier l&#8217;assaisonnement.<\/p><p>Couper le vert des tomates cerises aux ciseaux, les laver et les inciser avec la pointe d\u2019un couteau. Les disposer dans une casserole avec la gousse d\u2019ail coup\u00e9e en deux, le romarin, le laurier et assaisonner de sel.
