m\u00e9diterran\u00e9enne, laver puis bien blanchir \u00e0 l&#8217;eau bouillante sal\u00e9e les feuilles d&#8217;\u00e9gopode, puis les rafra\u00eechir et les \u00e9goutter. Mettre l&#8217;huile d&#8217;olive \u00e0 chauffer dans une casserole. Faire revenir l&#8217;\u00e9chalote, le gingembre, l&#8217;ail et le poivron rouge sans coloration pendant 2 minutes. Ajouter la tomate et les olives noires et laisser mijoter 10 minutes. Ajouter l&#8217;\u00e9gopode hach\u00e9 grossi\u00e8rement et assaisonner de sel, poivre et chili. Remuer et v\u00e9rifier l&#8217;assaisonnement.<\/p><p>Pour la sauce \u00e0 l&#8217;alliaire, \u00e9mincer les \u00e9chalotes en lani\u00e8res et les faire revenir dans une casserole avec 1 cuill\u00e8re \u00e0 soupe de beurre. D\u00e9glacer avec le vin blanc et laisser r\u00e9duire de moiti\u00e9. Ajouter le fumet de poisson et laisser r\u00e9duire d\u20191\/3. Ajouter la cr\u00e8me et r\u00e9duire \u00e0 nouveau d\u20191\/3. Ajouter l&#8217;alliaire blanchi et hach\u00e9 fin, puis mixer la sauce. Lier la sauce \u00e0 la ma\u00efzena, monter au beurre et assaisonner de sel et de poivre.<\/p><p>Pour les chips d&#8217;alliaire, cuire la petite pomme de terre coup\u00e9e en morceaux dans l&#8217;eau avec une pinc\u00e9e de sel. Passer au tamis fin pour r\u00e9cup\u00e9rer le jus. Le lier avec la f\u00e9cule de pomme de terre dilu\u00e9e avec un peu d&#8217;eau froide en portant \u00e0 \u00e9bullition. \u00c9taler \u00e0 l&#8217;aide d&#8217;une petite cuill\u00e8re du jus \u00e9paissi sur une toile Silpat et y d\u00e9poser au centre une petite feuille d&#8217;alliaire. Laisser s\u00e9cher au four ou dans un d\u00e9shydrateur \u00e0 60 \u00b0C pendant environ 3 heures. Frire alors les chips dans un bain d&#8217;huile \u00e0 140 \u00b0C 5 secondes et les d\u00e9poser sur un papier absorbant.<\/p><p>Pour la mayonnaise au wasabi, r\u00e9aliser une mayonnaise avec le jaune d\u2019\u0153uf, wasabi, sel et poivre, 1 c. \u00e0 c. d&#8217;eau, mont\u00e9s avec l&#8217;huile de tournesol. V\u00e9rifier l&#8217;assaisonnement.<\/p><p>Po\u00ealer les noix de Saint Jacques dans une po\u00eale bien chaude l\u00e9g\u00e8rement huil\u00e9e, environ 30 sec de chaque c\u00f4t\u00e9. Assaisonner de sel et poivre et finir de cuire quelques minutes au four \u00e0 150 \u00b0C jusqu\u2019\u00e0 ce qu\u2019elles soient ti\u00e8des \u00e0 c\u0153ur.<\/p><p><span style=\"color:
