petits morceaux. R\u00e9duire en pur\u00e9e fine dans un mixeur avec le gingembre hach\u00e9, l\u2019\u00e9chalote, le sel et le poivre. Ajouter les blancs d&#8217;\u0153ufs et continuer \u00e0 mixer. Ajouter progressivement la cr\u00e8me et mixer jusqu\u2019\u00e0 obtenir une consistance cr\u00e9meuse.<\/p><p>Couper le filet de saumon en lani\u00e8res de 2 cm de grosseur et les assaisonner de sel et poivre. Disposer les feuilles d&#8217;ail des ours sur du film plastique en les chevauchant l\u00e9g\u00e8rement. Rouler dessus \u00e0 l&#8217;aide d&#8217;un rouleau \u00e0 p\u00e2tisserie pour \u00e9craser les nervures et aplatir les feuilles. \u00c9taler une fine couche de farce, poser au milieu une longue lani\u00e8re de saumon et enrouler le tout fermement \u00e0 l&#8217;aide du film plastique.\u00a0 Enrouler alors dans une feuille d&#8217;aluminium et fermer les extr\u00e9mit\u00e9s comme un bonbon. Cuire au four vapeur \u00e0 92 \u00b0C pendant 10 minutes. Mettre \u00e0 refroidir.\u00a0<\/p><p>Pour les chips d&#8217;ail des ours, cuire la petite pomme de terre coup\u00e9e en morceaux dans l&#8217;eau avec une pinc\u00e9e de sel. Passer au tamis fin pour r\u00e9cup\u00e9rer le jus. Le lier avec la f\u00e9cule de pomme de terre dilu\u00e9e avec un peu d&#8217;eau froide en portant \u00e0 \u00e9bullition. \u00c9taler \u00e0 l&#8217;aide d&#8217;une petite cuill\u00e8re du jus \u00e9paissi sur une toile Silpat et y d\u00e9poser au centre une petite feuille d&#8217;ail des ours. Laisser s\u00e9cher au four ou dans un d\u00e9shydrateur \u00e0 60 \u00b0C pendant environ 3 heures. Frire alors les chips dans un bain d&#8217;huile \u00e0 140 \u00b0C 5 secondes et les d\u00e9poser sur un papier absorbant.<\/p><p>Pour la salade de fenouil, laver le fenouil puis le tailler en tranches fines \u00e0 l&#8217;aide d&#8217;une trancheuse \u00e0 jambon ou d&#8217;une mandoline japonaise. Le mettre dans un saladier. Laver une orange, en r\u00e2per le zeste et l&#8217;ajouter au fenouil. Peler les 2 oranges \u00e0 vif, lever les filets puis les couper en 3 et les ajouter au fenouil. Presser le jus d&#8217;orange restant dans un verre mesureur, y ajouter le jus de citron, l&#8217;huile d&#8217;olive, assaisonner de sel et poivre. Mixer le tout \u00e0 l&#8217;aide d&#8217;un bain mixeur et ajouter une pointe de cuill\u00e8re de Xanthana pour lier un peu la vinaigrette. Ajouter cette vinaigrette au fenouil, m\u00e9langer et v\u00e9rifier l&#8217;assaisonnement.<\/p><p>Pour la r\u00e9moulade \u00e0 l&#8217;ail des ours, commencer par r\u00e9aliser une huile \u00e0 l&#8217;ail des ours en mixant finement autant d&#8217;ail des ours que d&#8217;huile de tournesol en assaisonnant de sel et poivre (il est recommand\u00e9 de mixer une certaine quantit\u00e9 dans le thermomix pour obtenir une belle huile verte homog\u00e8ne). R\u00e9aliser une mayonnaise avec le jaune d\u2019\u0153uf, moutarde, vinaigre, sel et poivre, mont\u00e9s avec l&#8217;huile \u00e0 l&#8217;ail des ours et l&#8217;huile de tournesol. Ajouter alors tous les autres ingr\u00e9dients et v\u00e9rifier l&#8217;assaisonnement.<\/p><p><span style=\"color: #000000;\">Tailler le rouleau de saumon en tranches.
