chauffer une po\u00eale et y saisir les cuisses de canard sur toutes leurs faces. Assaisonner de sel, poivre et garam massala. Les mettre dans la &#8220;R\u00f6mertopf&#8221;*<\/span>. Saisir dans la m\u00eame po\u00eale l&#8217;oignon et la carotte taill\u00e9s en mirepoix, ajouter le concentr\u00e9 de tomate et revenir l\u00e9g\u00e8rement. D\u00e9glacer avec le vin rouge, puis avec le fond de volaille. Mettre ce fond de cuisson ainsi que les herbes aromatiques dans la &#8220;R\u00f6mertopf&#8221;. Cuire au four \u00e0 150 \u00b0C environ 3 heures.<\/p><p>Retirer les cuisses de canard, passer le fond de cuisson dans une casserole au travers d&#8217;une passoire fine. R\u00e9duire \u00e9ventuellement le fond, ajouter la confiture de m\u00fbre, lier \u00e0 la ma\u00efzena si besoin puis monter au beurre. V\u00e9rifier l&#8217;assaisonnement.<\/p><p>Pour les tagliatelles de panais, \u00e9plucher et laver les panais puis les tailler en fines lamelles \u00e0 l\u2019aide d\u2019une mandoline ou d\u2019une trancheuse. Les tailler en deux dans la longueur. Les blanchir quelques secondes dans de l\u2019eau bouillante sal\u00e9e puis les rafra\u00eechir dans de l\u2019eau froide. Les \u00e9goutter. Laver et \u00e9queuter les feuilles de panais sauvage. Si elles sont \u00e2g\u00e9es, les blanchir une minute dans de l\u2019eau bouillante sal\u00e9e puis les rafra\u00eechir dans de l\u2019eau froide et enfin les \u00e9goutter. Faire chauffer le beurre dans une casserole. Ajouter les tagliatelles et feuilles de panais. Assaisonner de sel et poivre.<\/p><p>Pour les c\u00e8pes, les nettoyer, les couper en morceaux puis les saisir \u00e0 l&#8217;huile et au beurre dans une po\u00eale chaude. Assaisonner de sel et poivre.<\/p><p><span style=\"color: #000000;\">Dresser les diff\u00e9rents ingr\u00e9dients sur des petites assiettes comme vous pouvez le voir sur la photo.<\/span><\/p><p><em>* Un &#8220;R\u00f6mertopf&#8221; est un pot ovale en argile avec un couvercle introduit en Allemagne en 1967 par Eduard Bay GmbH et utilis\u00e9 pour cuire des aliments au four.
