clarifi\u00e9 et le jus de chicor\u00e9e<\/span> :<\/p><p>Faites fondre 150 g de beurre \u00e0 feu doux. Retirer l&#8217;\u00e9cume et versez dans un bol en laissant le petit lait au fond de la casserole. R\u00e9servez \u00e0 temp\u00e9rature ambiante. Pr\u00e9parez la chicor\u00e9e de fa\u00e7on \u00e0 obtenir 4 c. \u00e0 s. de jus.<\/p><p><span style=\"text-decoration: underline;\">La mousseline de raves et les mousserons<\/span> :<\/p><p>\u00c9pluchez et lavez les raves. Coupez-les en petits d\u00e9s et faites-les cuire \u00e0 la marmite \u00e0 pression pendant 7 mn \u00e0 partir du chuintement de la soupape. Mixez-les, salez, sucrez. Gardez au chaud. Lavez rapidement les mousserons, 3 fois de suite. \u00c9gouttez-les et faites-les sauter avec 50 g de beurre. Assaisonnez-les et r\u00e9servez au chaud.<\/p><p><span style=\"text-decoration: underline;\">La sauce \u00e0 la chicor\u00e9e<\/span> :<\/p><p>Mettez les jaunes d\u2019\u0153ufs dans une jatte dans un bain-marie non bouillant. Fouettez-les jusqu&#8217;\u00e0 ce qu&#8217;ils blanchissent. Incorporez-y peu \u00e0 peu le jus de chicor\u00e9e. Fouettez sans cesse jusqu&#8217;\u00e0 ce que le m\u00e9lange \u00e9paississe puis, hors du bain-marie, versez le beurre clarifi\u00e9 en mince filet, sans cesser de fouetter.
