Kornelkirschenso\u00dfe die Kornelkirsche waschen und in einem Topf mit dem Wasser zum Kochen bringen. Langsam k\u00f6cheln lassen, bis die Kornelkirschen auseinanderfallen. Das Fruchtfleisch durch ein Sieb passieren, um die Steine \u200b\u200bzu entfernen<\/span>.<\/p><p>Die Schalotten in Streifen schneiden, in einem Topf mit 1 EL Butter anschwitzen. Mit dem Weisswein abl\u00f6schen und auf die H\u00e4lfte reduzieren. Den Fischfond dazugeben und um 1\/3 reduzieren. Die Sahne dazugeben und nochmal um 1\/3 reduzieren. Die Sauce aufmixen und durch ein Haarsieb streichen. Mit Mondamin binden, mit der Butter aufmontieren und mit Salz und Pfeffer abschmecken. Den Zucker in einem Topf karamellisieren, die Fischsauce dazugeben und nach und nach das Kornelkirschenmark dazugeben. Abschmecken.<\/p><p>F\u00fcr das Lauchp\u00fcree die Schalotte fein schneiden. Einen Topf erhitzen, den Kreuzk\u00fcmmel trocken anbraten, das St\u00fcck Butter und die Schalotte dazugeben und anschwitzen. Den Lauch (temperiert oder auch lauwarm) mit der gebr\u00e4unten Schalotte fein vermischen. Die geschmolzene Butter hinzuf\u00fcgen und mit Salz und Pfeffer w\u00fcrzen.<\/p><p>F\u00fcr die Zucchini-Spaghetti gehackten Oregano, Knoblauch, Curry, Salz und Oliven\u00f6l zusammen mixen. Mit einem geeigneten Gem\u00fcseschneider die Zucchini in Spaghetti schneiden. Eine Pfanne erhitzen, die Marinade hineingie\u00dfen und die Zucchini-Spaghetti kurz kochen. Mit Salz und Pfeffer w\u00fcrzen und aus der Pfanne nehmen, solange sie noch etwas fest sind.<\/p><p>Die Kabeljaufilets parieren und portionieren. Mit Salz, Pfeffer und Garam Masala w\u00fcrzen und in einer hei\u00dfen Pfanne mit Oliven\u00f6l anbraten.
