Stiel zupfen und waschen. 12 kleine Bl\u00e4tter bei Seite stellen. Die restliche Bl\u00e4tter in kochendem, gesalzenen Wasser paar Minuten weich blanchieren dann abschrecken. Den Giersch abtropfen und fein hacken. Das Kabeljaufilet klein schneiden. Im Mixtopf mit dem gehackten Giersch, die Schalotte, die Knoblauchzehe, Salz und Pfeffer fein p\u00fcrieren. Die Eier dazugeben und weiter mixen. Die Schlagsahne nach und nach dazugeben und zu einer cremigen Masse aufschlagen. Die kleine Gierschbl\u00e4tter in der Form legen und mit Kabeljau-Mousseline f\u00fcllen. Im Kombi-D\u00e4mpfer bei 80\u00b0C ca 30 min oder im hei\u00dfen Wasserbad bei 110\u00b0C etwa 30 min garen.<\/span><\/p><p><span style=\"color: #000000;\">F\u00fcr die Bockshornklee-Sauce die Schalotten in Streifen schneiden, in einem Topf mit 1 EL Butter anschwitzen. Mit dem Weisswein abl\u00f6schen und auf die H\u00e4lfte reduzieren. Den Fischfond dazugeben und um 1\/3 reduzieren. Die Sahne dazugeben und nochmal um 1\/3 reduzieren. Den getrockneten Bockshornklee dazugeben und 10 Minuten ziehen lassen. Die Sauce aufmixen und durch ein Haarsieb streichen. Mit Mondamin binden, mit der Butter aufmontieren und mit Salz und Pfeffer abschmecken.<\/span><\/p><p><span style=\"color: #000000;\">Die Taubnesselbl\u00e4tter waschen, einige Minuten in kochendem Salzwasser blanchieren, bis sie weich sind, und dann abschrecken. Den Taubnessel abtropfen und grob hacken. In einem Topf die gehackte Schalotte mit der Butter anschwitzen.
