Absch\u00fctten, in kaltem Wasser abschrecken und abtropfen lassen. Mit Meersalz, Zucker, Zitronensaft und Oliven\u00f6l w\u00fcrzen.<br \/>Die Makrelenfilets in d\u00fcnne Scheiben schneiden und jeweils aufrollen.<br \/>F\u00fcr den Brennnesseltee das Wasser aufkochen. Mit einem Nudelholz \u00fcber die Brennnesseln rollen, um die Brennh\u00e4rchen unsch\u00e4dlich zu machen, dann die Bl\u00e4tter in Streifen schneiden und mit dem kochenden Wasser aufgie\u00dfen. Abk\u00fchlen lassen und den Tee durch ein Sieb abseihen.<br \/>F\u00fcr den Brennnesselkaramell den Zucker goldbraun karamellisieren, den Brennnesseltee und den Essig dazugie\u00dfen, aufkochen und zu sirupartiger Konsistenz einkochen. Abk\u00fchlen lassen.<br \/>F\u00fcr die Tapenade die Akazienbl\u00fcten mit dem Knoblauch im Oliven\u00f6l d\u00fcnsten. Abk\u00fchlen lassen. Dann Sardellenfilets, Kornelkirschen, Thunfisch und Zitronensaft dazugeben und alles mit dem P\u00fcrierstab s\u00e4mig p\u00fcrieren. Mit Chilipulver abschmecken. K\u00fchl aufbewahren. Die Tapenade h\u00e4lt sich im K\u00fchlschrank mehrere Wochen.<br \/>Mit Brennnesselkaramell eine Linie \u00fcber die Teller ziehen. Die Roten Oliven und die Rote-Olive-Tapenade auf die Teller verteilen und jeweils 3 augerollte Makrelenfilets dazusetzen.
