Die Butter in einer separaten Sch\u00fcssel weich r\u00fchren. Das gesiebte Mehl auf die Arbeitsfl\u00e4che geben und in der Mitte eine Mulde formen. Die Butter und die Ei-Zucker-Mischung in die Mulde geben und alles zu einem glatten Teig verkneten. Den Teig auf einem St\u00fcck Frischhaltefolie grob ausrollen und 1 Stunde im K\u00fchlschrank ruhen lassen.<\/p><p>Die Tarteformen mit dem Teig auslegen. Den Boden mit einer Gabel einstechen. Einige Minuten kalt stellen. Anschlie\u00dfend im vorgeheizten Backofen bei 170 \u00b0C etwa 15 Minuten backen.<\/p><p>F\u00fcr die Ganache, 200 g Schokoladenkuvert\u00fcre in kleine St\u00fccke schneiden. Die Sahne mit dem Fichtenp\u00fcree erhitzen. Die Kuvert\u00fcre dazugeben und gut verr\u00fchren, bis eine glatte Ganache entsteht.<\/p><p>50 g dunkle Schokoladenkuvert\u00fcre temperieren und die T\u00f6rtchenb\u00f6den damit bestreichen. Die B\u00f6den mit der Fichtensprossen-Ganache f\u00fcllen und durch leichtes Klopfen gleichm\u00e4\u00dfig verteilen. K\u00fchl stellen.\u00a0<\/p><p>F\u00fcr die Fichtenspitzen in Schokolade, die Kuvert\u00fcre im Wasserbad langsam temperieren. Die Fichtenspitzen in die Kuvert\u00fcre tauchen und sie dann auf ein mit einem Silpat ausgelegtes Backblech legen.<\/p><p>F\u00fcr das Fruchtgel das Himbeerep\u00fcree in einen Topf geben. Zucker und Agar-Agar hinzuf\u00fcgen und 2 Minuten bei schwacher Hitze kochen. Abk\u00fchlen lassen.
