waschen und in kochendem Salzwasser blanchieren, anschlie\u00dfend in kaltem Wasser abschrecken und abtropfen lassen. Oliven\u00f6l in einem Topf erhitzen. Schalotte, Ingwer, Knoblauch und rote Paprika 2 Minuten glasig d\u00fcnsten. Tomaten und schwarze Oliven hinzuf\u00fcgen und 10 Minuten k\u00f6cheln lassen. Grob gehackten Giersch dazugeben und mit Salz, Pfeffer und Chili w\u00fcrzen. Umr\u00fchren und abschmecken.<\/p><p>Die Schalotten in Streifen schneiden, in einem Topf mit 1 EL Butter anschwitzen. Mit dem Weisswein abl\u00f6schen und auf die H\u00e4lfte reduzieren. Den Fischfond dazugeben und um 1\/3 reduzieren. Die Sahne dazugeben und nochmal um 1\/3 reduzieren. Den blanchierten und fein gehackten Knoblauchsrauke dazugeben und die Sauce anschlie\u00dfend p\u00fcrieren. Mit Mondamin binden, mit der Butter aufmontieren und mit Salz und Pfeffer abschmecken.<\/p><p>F\u00fcr die Knoblauchsrauke-Chips eine kleine, in St\u00fccke geschnittene Kartoffel in Salzwasser kochen. Durch ein feines Sieb abgie\u00dfen, um den Saft aufzufangen. Den Saft mit in etwas kaltem Wasser anger\u00fchrter Kartoffelst\u00e4rke andicken und aufkochen lassen. Den eingedickten Saft mit einem kleinen L\u00f6ffel auf einer Silikonmatte verteilen und ein kleines Knoblauchsrauke-Blatt in die Mitte legen. Im Backofen oder D\u00f6rrger\u00e4t bei 60 \u00b0C etwa 3 Stunden trocknen lassen. Anschlie\u00dfend die Chips in 140 \u00b0C hei\u00dfem \u00d6l 5 Sekunden lang frittieren und auf K\u00fcchenpapier abtropfen lassen.<\/p><p>F\u00fcr die Wasabi-Mayonnaise eine Mayonnaise aus Eigelb, Wasabi, Salz und Pfeffer, 1 TL Wasser und Sonnenblumen\u00f6l zubereiten. Abschmecken.<\/p><p>Die Jakobsmuscheln in einer hei\u00dfen, leicht ge\u00f6lten Pfanne auf jeder Seite etwa 30 Sekunden braten. Mit Salz und Pfeffer w\u00fcrzen und einige Minuten im Ofen bei 150 \u00b0C fertig garen, bis sie lauwarm sind.<\/p><p><span style=\"color: #000000;\">Legen Sie die verschiedenen Zutaten in
