p\u00fcrieren, durch ein Haarsieb streichen und mit Zucker und Salz w\u00fcrzen.<br \/><br \/>Die Avocado und die Mango in 1\/2 Zentimeter dicke W\u00fcrfel schneiden und mit den genannten Zutaten w\u00fcrzen. Den Radicchio waschen und putzen, anschlie\u00dfend fein hacken. Den Sauerampfer ebenfalls fein hacken. Beides mit der Avocado-Mango-Mischung vermengen und nochmals abschmecken.<br \/><br \/>Den Backofen auf 180 \u00b0C vorheizen. F\u00fcr die Gew\u00fcrzcracker 8 Scheiben von 3 Zentimeter Durchmesser aus dem Brickteig schneiden. Mit der geschmolzenen gekl\u00e4rten Butter bestreichen und mit Flohsamen und Meersalz bestreuen. Im hei\u00dfen Ofen 10 Minuten backen. Herausnehmen und abk\u00fchlen lassen.<br \/><br \/>F\u00fcr den Orangenbl\u00fctenschaum alle Zutaten in einen Topf geben und einmal aufkochen lassen. Mit dem Stabmixer homogenisieren.<br \/><br \/>Die Riesengarnelen unter flie\u00dfendem kaltem Wasser waschen, abtropfen lassen und bis auf die Schwanzflosse aus den Schalen brechen. Den dunklen Darmfaden entfernen. Das \u00d6l erhitzen und die Garnelen rundum 2 bis 3 Minuten braten, zum Schluss salzen.<br \/><br \/>Zum Anrichten 1 Essl\u00f6ffel Gaspacho auf den Teller ziehen. Den Avocado-Mango-Salat in zwei Etagen mit den Crackern anrichten und die Garnelen danebenlegen. Den Orangenbl\u00fctenschaum erw\u00e4rmen, nochmals sch\u00e4umen und einen Essl\u00f6ffel dar\u00fcbergeben. Mit den Orangenfilets und Sauerampferbl\u00e4ttern garnieren.<br \/><br \/>Anmerkung: F\u00fcr das Brennnesselp\u00fcree sammelt man junge und zarte Brennnesselbl\u00e4tter. Sie werden gewaschen, blanchiert und unter kaltem Wasser abgeschreckt. Anschlie\u00dfend dr\u00fcckt man sie aus und p\u00fcriert sie mit einem Stabmixer.
