einen kleinen Beh\u00e4lter geben und das Traubenkern\u00f6l dar\u00fcbergie\u00dfen. Eine Woche kalt ziehen lassen. Anschlie\u00dfend das \u00d6l durch ein Haarsieb geben. Mit dem Hagebuttenessig und Salz mischen.<br \/><br \/>Die Dorade vorbereiten und filetieren. Die Gr\u00e4ten entfernen. Die Gundermannbl\u00e4tter fein hacken und auf den Filets verteilen. Salz und Zucker vermengen und \u00fcber die Filets streuen. 12 Stunden ziehen lassen. Anschlie\u00dfend Salz und Zucker sorgf\u00e4ltig abstreifen und die Filets etwa 10 Stunden auf einem Rost trocknen lassen.<br \/><br \/>Den Schnittlauch in feine R\u00f6llchen schneiden. Mit \u00d6l und Salz fein p\u00fcrieren. Das Schnittlauch\u00f6l durch ein Haarsieb streichen und nochmals mit Salz abschmecken.<br \/><br \/>Die Aprikosen mit zwei Eiwei\u00dfen und das Mehl fein p\u00fcrieren. Die restlichen Eiwei\u00dfe unterr\u00fchren und durch ein Haarsieb streichen. Auf einem mit einer Silikonmatte ausgelegten Backblech mit Hilfe einer rechteckigen Schablone austreichen und mit Schabzigerklee bestreuen. Im Backofen bei 140 \u00b0C 7 bis 8 Minuten backen. Noch warm in Metallringe (5 cm Durchmesser) einlegen und erstarren lassen.<br \/><br \/>Quinoa in kochendem Salzwasser 10 Minuten kochen. Abtropfen lassen und mit kaltem Wasser absp\u00fclen. Die anderen Zutaten hinzuf\u00fcgen und w\u00fcrzen.<br \/><br \/>Zum Anrichten die Kr\u00e4uter mit Labkrautvinaigrette benetzen. Den Teller mit Hagebuttensauce und Schnittlauch\u00f6l bestreichen. Die Hippe auf dem Teller platzieren. Die Dorade in feine Scheiben schneiden. Mit Piment d'Espelette best\u00e4uben, mit der Vinaigrette betr\u00e4ufeln und in die Hippe legen. Einen Essl\u00f6ffel Quinoa hinzuf\u00fcgen und mit den Kr\u00e4utern bestreuen.
