Milch aufkochen, Holunderbl\u00fcten dazugeben und zugedeckt 10 Minuten ziehen lassen. Durch ein feines Sieb gie\u00dfen. Milch zur\u00fcck in den Topf geben, Zucker dazugeben, aufkochen lassen und den feinen Grie\u00df einrieseln lassen. 10 Minuten quellen lassen. Grie\u00df mit einem Schneebesen gut verr\u00fchren und die eingeweichte Gelatine hinzuf\u00fcgen. Abk\u00fchlen lassen. Bevor der Grie\u00df fest wird, Schlagsahne unterr\u00fchren. Mousse in eine mit Klarsichtfolie belegte Terrine f\u00fcllen. Im K\u00fchlschrank fest werden lassen.<\/span><\/p><p>F\u00fcr die Thymiankirschen das Kirschglas abgie\u00dfen, dazu den Saft in einen Topf geben. Den Kirschsaft aufkochen und den Thymian dazugeben. 10 Minuten zugedeckt ziehen lassen. Anschlie\u00dfend den Kirschsaft durch ein feines Sieb passieren. Den Zucker in den Topf geben und zu einem hellen Karamell karamellisieren. Mit dem Kirschsaft abl\u00f6schen und die Kirschen dazugeben. Den Saft langsam auf die H\u00e4lfte einkochen lassen und nach Belieben mit etwas Speisest\u00e4rke binden.<\/p><p>F\u00fcr den Tempura-Teig alle Zutaten mit einem Stabmixer vermischen, bis eine glatte Masse entsteht. Die Bl\u00fctenst\u00e4nde der Holunder in den Teig tauchen und bei 160 \u00b0C in \u00d6l frittieren.
